So Darn Good Raw Pumpkin Pie Recipe

I have been seeing more and more raw pumpkin pie recipes circulating online, and I knew I wanted to create my own.  I love to keep things as simple as possible as many of you know and this recipe is no different.  Here is my own twist of the raw pumpkin pie that turned out so much better than I imagined.

For this recipe I used one whole pie pumpkin which I sliced into cubes before blending in my Vitamix blender.  Any high speed blender or food processor should work though.  I used a potato peeler to remove the skin of the pumpkin which was a bit of work, yet I am beyond grateful that pie pumpkins are so much smaller than the traditional pumpkins used for pumpkin carving.  Preparing the pumpkin was the most tedious part of this recipe.  Once the pumpkin seeds and fibers are removed as well as the pumpkin skin, you are good to go!

What you will need:

Crust
1 cup pine nuts
1 cup walnuts
2 cups pitted dates

Filling
1 cup pitted dates
3 cups sliced bananas
1 pie pumpkin sliced and seeds removed
1 tbsp pumpkin pie spice
1/4 cup coconut oil

Tools
Potato peeler
Food processor
Vitamix or high speed blender
Knife/Cutting board
Pie pan

To make the delicious crust for this pie, add the pie crust ingredients into the food processor, and combine ingredients using the pulse setting until the mixture is complete.  Although it may not appear gooey in the processor, this crust will easily mold into the bottom of the pie pan.  This crust was so good I had to restrain myself from just eating it right then.

For the filling add the softer ingredients to the high speed blender first such as the bananas, dates, and coconut oil, then the pumpkin pie spices and pumpkin cubes.  I found it easier to blend these ingredients in this order using the Vitamix tamper to push the ingredients down as it blends.  Once the consistency of the filling is nice and creamy, it’s time to pour the filling into the pie pan.

I used walnuts to add embellishment on the edge of the pie, and a bit of pumpkin pie spice to sprinkle on top, yet be creative and use whatever you feel will make this gorgeous pie come to life.  Lastly place the pie into the freezer for at least three hours to help it solidify and enjoy!

This raw pumpkin pie is so good that it is seriously hard to believe that it wasn’t cooked, or that it could be sweet enough without refined sugar, honey, agave, coconut sugar,  etc.  What is so amazing about creating raw desserts is that you know exactly how it will taste without having to wait until after it is completely baked.  You can make any modifications needed during the blending process.  That’s exactly how I knew adding a third cup of sliced bananas was necessary.  Well I hope you try this recipe and love it as much as I do.

      I hope you love it! Making raw desserts is so easy and a much healthier alternative to every traditional dessert. Plus this one was so much sweeter than I thought was even possible after biting a piece of pumpkin by itself. <3

    It looks delicious, just a question: are the dates dried or fresh? And I usually cook pumpkin before I use it, do you think cooked pumpkin will work or will it alter the taste or texture?

      I used fresh dates with this recipe. Also I haven’t used a cooked pie pumpkin in this recipe so am not sure how it will come out. If you try this let e know how it comes out! <3

Fenugreek seeds, also called methi seeds, have a m Fenugreek seeds, also called methi seeds, have a multitude of medicinal properties along with being a prominent spice in many cultural dishes.  For starters, fenugreek seeds are packed with protein for strengthening strands, mucilage for moisturizing and soothing the scalp while detangling the hair, and most importantly nicotinic acid which may minimize hair shedding while soothing scalp issues.  Fenugreek seeds are also anti-inflammatory and anti-fungal which is beneficial for soothing a dry irritated scalp as well as high in iron. 🍂

Friday mornings are my busiest mornings of the wee Friday mornings are my busiest mornings of the week.  I make muffins for Saturday’s breakfast (either corn bread, pumpkin, or banana bread muffins) to have with fruit, a big crockpot dinner for the weekend (beans & rice bowls, lentils and sweet potato stews, or a big veggie and red potato stew) to serve with bread, tortillas, grains, and/or salad depending on the dish, and I’m usually putting orders together to go out for @iamazuha today too.  All the while I’m also making other food for the day. 🍂🥧🍁

Friday’s are crazy because of the usual responsibilities, but mainly because I really want to relax a bit over the weekend.  Over this past year I’ve worked really hard to create systems to make working from home and being a homemaker easier.  Homemaking really is like running a small boutique bed and breakfast hotel.  It takes planning ahead, having a solid system, financial planning, commitment, and a lot of love.  I’ve been learning to really enjoy this process.  Just like everybody else I’ve been baking more this year than ever.  Very rewarding. 🍂🥧🍁

With everything going on with the world wide pandemic, I’m seeing the importance of sharing anything good that the Lord is doing in your life with others.  We need HOPE. We could all use an IMMUNE BOOST right now.  Here’s a simple juice recipe that I make for just that.  I call it SPICY APPLE JUICE and my three (almost four) year old drinks it up no problem! 🍎 

I simply juice 2 WHOLE medium/large APPLES (3 small apples pictured) + 3 CLOVES of GARLIC in a slow masticating juicer for one immune boosting serving.  Yes I do include the core as it has many health benefits. 🍎 

After having my 1st official winter back on the east coast last year, RAW GARLIC was how I made it through without getting sick at all while caring for sick family members. 🍎 

Since then I juice garlic in many of my juice recipes or mince up multiple cloves as dinner toppings for chickpea pasta, beans and rice bowls, and stews.  What I LOVE most of all is hearing my son say, “More Juice?” Proud Mama!!!! 🍎

After tiring of purchasing new clothing every season for my heavily worn small capsule wardrobe, it just made sense to look for mid and heavy weight linen garments that could be worn year round and layered that actually lasted.

Linen clothing can last up to 2-3 decades if properly cared for.  I’ve made some mistakes along the way, but have finally found a simple method for caring for my linen garments. (Link in profile.)
