
Here is a simple vegan meal that I love to make which always comes out great. It consists of three main ingredients: carrots, potatoes, and string beans. There are a few variations of this meal that I create depending upon how much protein I need for the day as well as what ingredients are in my kitchen. What I love most about this hearty meal is that it is always a big pleaser without the big effort. I like to make this dish on the stove top in a big pan with a lid.
What You Will Need…
Organic carrots
Organic red potatoes
Organic string beans
Organic red onions
Organic garlic
Organic extra virgin coconut oil
Himalayan pink salt or sea salt
Turmeric
Paprika
Optional extras: organic tempeh, organic tofu, or roasted sunflower seeds
1. Chop up equal parts of carrots, string beans, and red potatoes. Also chop up some red onion as well as garlic for extra flavor. I usually add as much vegetables to the pan as I can fit. I do not have specific ratios of these ingredients as you literally can not go wrong with this dish. I sometimes add more potatoes to make it more filling.
2. Add enough coconut oil and water to the bottom of the pan so that the vegetables won’t stick. You can always add more so no worries.
3. I always cook the potatoes, onions, and garlic first so that they are almost completely cooked before adding the carrots and string beans. (If you choose to add tempeh or tofu to your dish this is the best time to add them.) This is also when I add seasonings such as sea salt, paprika, and turmeric. Use your favorite seasonings. And stir pretty consistently.
4. Finally add in your carrots and string beans and allow them to cook for about 5-7 minutes. Add more seasonings if you wish and season to taste.
5. Serve and enjoy!
For this dish that I made recently, I did not add tempeh or tofu and instead opted for roasted sunflower seeds as a garnish and for protein. Sunflower seeds are a great source of protein. Be as creative as you wish with this meal. I’ve even swapped out the string beans for collard greens with great success. You can always add a large fresh green salad or whatever else you choose to this meal. Enjoy your life and enjoy your food!
