Pomegranate Cucumber Quinoa Salad Recipe

I am always looking to create easy recipes that look incredible and taste even better.  Today I wanted to share a perfect recipe to add to your lunch or dinner.  The presentation is simple but gorgeous, and I am sure it will please.

What you will need...

  • 1 1/2 cups organic quinoa

  • 3 cups distilled/purified water

  • 2 large organic cucumbers diced

  • seeds from 1 organic pomegranate

  • 1/2 cup minced organic parsley

  • 1 cup minced organic kale

  • 1/2 tsp oregano

  • juice from 2 organic lemons

  • sea salt & lemon pepper to taste

Begin by cooking the organic quinoa with water.  Bring to a boil then simmer for 30 minutes.  Prepare the other ingredients while the quinoa is cooking.  Once the quinoa is cooked and cooled, add the other ingredients.  Pour the lemon juice over the salad, then add sea salt and lemon pepper to taste, usually a dash or two.  You don't need much sea salt or lemon pepper.

The only time consuming part of this recipe is removing the pomegranate seeds, yet I completed this salad in about 30-40 minutes.  To speed up the process I put the cooked quinoa in the freezer to help it cool faster.  Sometimes you have to be a bit creative if you are in a bit of a rush.  One note though... Do not serve this immediately since the lemon juice must sink into the salad well so that it won't taste too tart.  Once it's had a moment to marinate, you won't believe how something so simple could taste so good!
