Delightful Raw Apple Persimmon Crumble

There is nothing more delicious than a juicy autumn persimmon.  Although I was sad to watch peach season disappear with summer, I couldn't help but be super excited about fall persimmons.  Persimmons are so sweet, and the rich orange color couldn't be more exquisite!

I will be completely honest by admitting that I have never been much of a baker.  Despite my desire to bake, that never stopped me from appreciating a good dessert.  When I quit eating refined sugars and embraced eating abundant raw foods, I became enamored in creating raw desserts.

Raw desserts are so easy to make and their pure healthy delicious-ness has been worth giving up traditional desserts.  The combination of sweet apples, juicy persimmons, and this raw cookie dough topping is mind blowing.  Who knew eating healthy could taste so damn good!

What you will need...

Topping

  • 1 cup of organic pitted medjool dates

  • 1/2 cup of organic oats

  • 1/2 cup of organic walnuts

Filling

  • 3 ripe large organic persimmons

  • 3 sweet large organic apples

  • juice of 1/2 an organic lemon juice

  • 1/2 tsp of pumpkin pie spice

To create the apple persimmon crumble topping, pulse the dates, oats, and walnuts in a food processor until it resembles cookie dough.  This topping is also incredible for smoothie bowls and could even make a pretty awesome raw pie crust.  If you become obsessed with this raw cookie dough (aka rawnola) like I have, double the recipe so there is plenty more for smoothie bowls, other fruit toppings, or literally just to eat out of the jar!

The filling for this dessert consists of a sauce and chopped fruit.  Peel the skin on one apple and one persimmon.  Chop the peeled fruit in small pieces.  Next blend the other four pieces of fruit in a high speed blender or Vitamix with the lemon juice, and pumpkin pie spice.  I like it to blend this combination thoroughly, but still keep some texture in the sauce.  (I used Fuji and Gala apples as well as Fuyu persimmons for this recipe, yet choose your favorite.)

Finally mix the sauce with the chopped fruit and serve with as much crumble topping as your heart desires.  If you are feeling extra fancy, why not serve with a scoop of banana nice cream, which is simply frozen bananas blended in a high speed blender or Vitamix.  This dessert serves 4-6.  It could also make a wonderful breakfast when you need a festive change.
