Simple Yet Epic Raw Zucchini Pasta Recipe

I love eating raw foods.  I especially love how I feel eating this way.  I leave elaborate dishes for special occasions and keep it very simple daily.  This insatiable raw zucchini pasta is actually easier and faster to whip up than the huge salads I usually make in the evenings.  I was also shocked with how filling this dish is.  This specific recipe serves two if it’s the main dish.

I purchased a stainless steel julienne peeler specifically for this recipe. This inexpensive kitchen tool can also be used for baked string sweet potato fries and so much more.  You can also use a spiralizer, yet when I discovered that a julienne peeler provided the same effect for less, I went with the simpler kitchen tool.

What you will need...

Pasta

  • Julienne peeler or spiralizer

  • 6 large organic zucchinis

Sauce

  • Vitamix, food processor, or other high speed blender

  • 4 largely chopped organic celery stalks

  • 2 pitted organic avocados

  • 1 organic tomato quartered

  • 3 tbsp sunflower seeds

  • handful of organic parsley

  • about 1 cup of leftover zucchini that wasn't peeled/spiralized

  • 1/4 tsp Himalayan sea salt (optional)

  • black pepper (optional)

Peel or spirialize the zucchini into a big bowl.  I used the leftover zucchini that I couldn’t peel for the sauce.  This avocado sauce is ridiculously creamy and delicious.  Add all of the ingredients to your Vitamix, food processor, or blender.  I like to put the avocado and zucchini at the bottom of my blender for easier mixing.

I used parsley the first few times making this recipe, yet use whatever fresh herbs you love most.  Dill is one of my favorites.  You can also experiment with adding other vegetables to your sauce such as spinach or cucumbers.  Be as creative as you desire!

Once your sauce is blended, mix it with your zucchini pasta noodles and you are ready to serve.  Use black pepper, sliced tomatoes, and/or parsley to garnish.  This dish is so easy to make, and it can work as the main entree or as a side dish.  It was a major winner at my home, and I'm sure you and your guests will love it too!  Please let me know if you try this recipe plus check out more healthy organic recipes.
